I'm probably the wrong type of person using this 'App'. I don't do multiple short jobs "On & Off" during the day, I get booked for a job for a 'Flat' day rate including 'taxes'. If I go over the Day rate maximum hours [10 Hours] I can add overtime at 1.5T.

So is it possible that Time Manager can derive from 'Time entries' whether or not its over 10, and then show on reports or invoices [Flat Rate + any overtime =].

Yes, that is no problem.  Just log your time by entering the Start and Stop time.  You can use the Overtime function to do the calculations of over 10 hours.
